3 egg yolks
1 T sugar
1/2 t salt
1 t dry mustard or 2 t prepared mustard
1 T cornstarch or flour
1 cup milk
1 T vinegar
3 T butter, cut into 6-8 pieces

Directions:
Directions:
Put egg yolks, salt, sugar and mustard in saucepan and mix well. Mix the cornstarch/flour in a couple tablespoons of milk to thicken. Whisk in remaining milk and vinegar and cook, stirring constantly, over medium-low heat until mixture is very thick. Don't let it boil or it will be lumpy. Remove from heat, whisk in the butter and taste for seasoning. Add sugar, salt or vinegar as needed for the taste you prefer. Pour over prepared potatoes and serve warm or cold.
