Mix:
2 cups flour
3 tbsp sugar
1 tsp salt
1 pkg active dry yeast
2 cups warm water

Gently stir with a whisk until well combined. Cover loosely with plastic wrap or waxed paper and let stand at room temperature for 3 days stirring daily. At the end of the 3rd day, the starter should be bubbly when you stir it and have a clean sour, somewhat alcoholic aroma. The starter is now ready to use or store in the refrigerator for up to 14 days. (After using some of the starter, it may be replinished by adding 1 cup of flour, 1 cup milk and 1/2 cup sugar.
