1 c shortening
1 c pumpkin
1 c sugar
1 egg

2 c flour
1 tsp baking powder
1 tsp soda
1 tsp cinnamon
½ tsp salt
1 tsp vanilla
1 c raisins
1 ½ c nuts

Directions:
Directions:
Cream together shortening, pumpkin, sugar and egg.
Add remaining ingredients.
Drop on greased sheet and bake for 10-15 min at 350º.
Top with caramel icing.
 

Caramel Icing


Ingredients:

¼ lb butter, melted
1 c brown sugar
¼ c milk
Confectioners sugar

Directions:
Directions:
Stir butter and brown sugar over low heat.
Add milk; stir until comes to a boil.
Add confectioners sugar until thick enough to spread.
