1 pkg. lemon cake mix
2 eggs
1/3 c. veg. oil
1 t. lemon extract
1/3 c. conf. sugar

Directions:
Preheat oven to 350 degrees.
Pour cake mix in lge. bowl and stir in eggs, oil, and lemon extract until well blended. Drop teaspoonfuls into bowl of conf. sugar. Roll until lightly covered and put on ungreased cookie sheet.
Bake 6-9 minutes in preheated oven. The bottoms will be light brown and the insides chewy.

I added a tsp. of lemon juice to batter and did not roll in
conf. sugar but sprinkled them with conf. sugar when done.
