1 small onion - diced
2 cloves garlic - diced
1 tbsp extra virgin olive oil
1 32 oz can tomato puree or sauce
1 8 oz can tomato paste
1 16 oz can stewed tomatoes (drained)
2 tbsp Italian seasoning
1 tbsp oregano
1/2 tsp salt
1/4 tsp black pepper
1 tbsp basil
1 tbsp sugar
2 tbsp grated parmesan cheese

You will need a large pot with a lid.

Directions:

Place olive oil, diced onion and garlic in the pot and fry until the vegetables are soft and plump.
Add in the other ingredients and combine fully.
Bring the sauce to a boil to activate the spices.
Let the sauce simmer for 2 hours - stirring frequently to prevent from sticking.
You can also move the sauce to a slow cooker and simmer on low for up to 8 hours.

If you wish to make a meat sauce, brown meat and drain the fat before adding to the sauce at the simmer stage. You can add ground meat and/or Italian or sweet sausage.

Serve over pasta or use to create a large lasagna.

This is my Italian mother-in-law's recipe (Rita Alemagno). We had to recreate the measurements because her original recipe called for "handfuls" of spices and served 36-40 people. She was always prepared to feed an Army!
