4-6 slices bacon, cut into ˝” strips
2 T butter, divided
1 large onion, peeled and diced
1 T flour
2 cups flour
2 cups water and/or chicken broth
4 medium potatoes, diced
ľ tsp fine salt (less if using chicken broth)
Dash black pepper
2 cups half-and-half, or evaporated milk
3 6.5oz cans chopped clams, drained with liquid reserved
Shredded carrots to your liking

In a Dutch oven or large pot over medium-high heat, cook bacon until almost crisp.

Reduce heat to low, add 1 T butter, onions, and sauté until soft and translucent, about 8 minutes. Be careful not to brown the onions.

Add the flour and cook for 2 minutes more.

Whisk in the water/broth and reserved clam juice; once combined, add the potatoes. Season with salt and pepper, increase heat to medium, bring to a simmer, and cook uncovered until potatoes are tender, about 15 minutes.

Reduce heat to very low, add the half-n-half, the remaining 1 T butter, and the clams, and cook until heated through. Do not boil! Turn off heat, adjust seasoning, and serve hot.
