"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
2½ cups flour
½ cup corn starch
1 cup Crisco shortening stick
1 teaspoon salt
1 teaspoon baking powder
10 tablespoons cold water
1 stick butter cut small to top pie filling
2 cans pie filling (21 oz cans) apple, cherry, blueberry, etc.
Powdered sugar
2 tablespoons butter
1 teaspoon vanilla
Milk

Directions:
Directions:
Crust:
1. Using pastry blender mix crisco into dry ingredients until it looks like small peas.

2. Drizzle on cold water (a little at a time) and mix just until will hold together - enough to form a ball.

3. Divide dough in half. Roll each half between 2 sheets of wax paper (roll bottom crust large enough to allow little to hang over edge of cookie sheet).

4. Place one half dough on cookie sheet. Spread filling on dough; leaving a little space around edge so you have space seal edges. Dot butter on fillings.

5. Place 2nd rolled dough on filling. Turn bottom crust up over top crust and press together to seal. When cool frost top with frosting.

Frosting:
1. Mix powdered sugar, 2 tablespoons butter and vanilla.

2. Add milk as needed to make spreadable.
