1 1/2 lbs hamburger
1 large onion
1 large green pepper

1 large can kidney beans
1lb. longhorn cheddar cheese, cubed or grated
2 tomatoes cut in bite size pieces
1 head of lettuce shredded
1 bag Nacho Cheese Dorito Chips, crushed
2 Tbsp McCormick Taco Seasoning
Bottle of Catalina Dressing
Directions:
Directions:
Brown the first three ingredients until onions are transparent and meat is well done. Drain if greasy. Put in a large bowl.

Add remaining ingredients.

Toss with 1/2 to 3/4 bottle of Catalina Dressing. Serve while warm.

The first time we had this Teddy Johnson’s Mom, Joyce made it for us. After that we had it several nights in a row, we all liked it so much, except Jennifer.

The Johnson’s were on the same little league team as we were and we “partied” with them quite a bit. Visiting them is how Ann Marie started playing with Eve, as she lived across the street from the Johnson’s. As a side note I recall Teddy worked with me on learning to ride a bike. It took me a bit, I have the scarred knees to prove it.
