3 Lbs skinless boneless chicken
2 Tbsp butter (or plant butter)
1 medium red onion, chopped
1 celery rib, chopped
2 Tbsp minced fresh parsley (or 1 Tbsp dried)
3 Tbsp flour
4 cups chicken broth (Kitchen Basics stock is best)
1 1/2 cups apple cider

Dumplings:
2 cups flour
1 Tbsp baking powder
1/2 tsp salt 1 Tbsp cold butter (plant butter)
1 large egg at room , lightly beaten
2/3 cup milk (or whole lactose free milk)


Directions:
Directions:
1. Preheat oven to 350º F. In a 5 quart Dutch oven, brown chicken in butter; remove and set aside. In the same pan, combine the onion, celery, parsley; cook and stir until vegetables are tender. Sprinkle with flour and mix well. Add stock and cider. Bring to a boil; cook and stir until thickened, about 2 min. Add chicken
2. Cover and bake 45-50 min. Increase heat to 425º F
3. Meanwhile, for dumplings, combine flour, baking powder and salt in a bowl. Combine milk with beaten eggs; stir into dry ingredients, just until moistened. Drop batter into 12 mounds onto of hot broth.
4. Bake uncovered at 425º F for 10 min. Cover and bake for 10 minutes. Check with toothpick, if it comes out clean it is done. If not cover and bake a few minutes longer.

The Kitchen Basics stock makes a much tastier dish than plan broth.
I use an 1/8th cup ice cream scoop to make the dumplings.
