5# fresh pig ears
5# stew beef or short rib
4 (15oz) cans of corn
1 (32oz) bottle ketchup
4 (12oz) jars hot sauce
3 whole peeled tomatoes
5-6 slices bread (optional)
5-7# diced potatoes

Directions:
Rinse and place all meat in large stock pot, cover with fresh water and boil for 2 hours until tender. Skin on ears should slide easily off of cartilage.

Once done, pour off water and rinse cooked meat again. Leave in cold water to cool. Remove and mince ears with cartilage, and stew beef. Remove meat and skin from tails and mince.

In large clean pit, add cans of corn with water, tomatoes, ketchup, hot sauce, all minced meat and 3-4 cups of additional water to cover all. Bring to a boil, reduce to simmer and cover.

Cook long enough for whole tomatoes to break apart and add potatoes, seasonings and additional water if needed. Stir occasionally to prevent meat and potatoes from sticking to bottom of the pot.

Once potatoes are done, turn off stove and let rest for 30 mins.
