1 c. shortening
1 c. granulated sugar
1 c. brown sugar, packed
2 eggs
1 ½ c. all-purpose flour
1 tsp. baking soda
3 c. quick oats
Optional: 1 c. raisins
⅔ c. chopped pecans

Preheat oven to 350ºF.

Cream together until fluffy:
1 c. shortening
1 c. granulated sugar
1 c. brown sugar, packed

Add in:
2 eggs
1 tsp. baking soda

Mix in:
1 ½ c. all-purpose flour
3 c. quick oats

Optional: 1 c. raisins
⅔ c. chopped pecans

If necessary, dough may be refrigerated. Roll into 1" balls or larger and place onto lightly greased cookie sheet. Allow for room for cookie to expand while baking. These cookies should be allowed to lightly brown so as to remain soft and chewy. I usually check often after 6 minutes to be sure that they are set, but not overbaked. Remove from oven and allow to cool 1-2 minutes on the cookie sheet before removing them to a
cooling rack or plate. As cookies cool, they are a bit less fragile and remain chewy. These cookies may be frozen to be thawed for later devouring.

Grandma Ella Mae was our three boys only living grandmother and her baked goods were well known. This cookie won a purple ribbon in the Wyandotte 4-H Fair, baked by our oldest son. No one will ever be able to touch her Potato Rolls, but we came close to her crafting of the oatmeal cookies.
