6-8 large russet potatoes, washed, and scrubbed left whole
1 can of peas and carrots rinsed and drained
1 green apple cored peeled and diced into cubes
1 white onion peeled amd diced into cubes
4-6 large eggs
¼ cup of olive oil ( make sure its a really good olive oil for dressing)
¼cup of hellmans mayo (more or less to your liking)
salt to taste + for boiling water
2 tbsp of apple cider vinegar

In a medium saucepan, add the lightly scored potatoes, eggs and salt and boil until fork tender and eggs are fully cooked. Set aside to cool

Peel, core and dice the green apple and dice the white onion.
in a small bowl, mix the oil, vinegar, salt and ionion together and set aside.

Once the potatoes have cooled, remove the skin, and dice both the potatoes and eggs and place them in a large salad bowl.

Add the apple, peas and carrots, the olive oil vinegar onion dressing and mix thoroughly. taste to make sure the salt level is good. Add half of the ¼ cup of mayo and mix well. Make sure the mayo level is to your liking. Keep in fridge until serving time.
