1 pound Sharp Cheddar
1 pound Gruyère
1 pound Pepper Jack
1/2 pound Butter
1/2 pound Flour
4 cups Cold Milk
1 1/2 pound Macaroni, cooked al dente
1/2 cup Panko
1/2 cup Parmesan
1/2 teaspoon Smoked Paprika
Small pinch Salt and Pepper

Directions:
Directions:
Freshly grated cheddar, Gruyère, and Pepper Jack. Melt butter in a large saucepan, and whisk in flour. Add milk and combine. Slowly add cheeses stirring constantly until melted and smooth. Stir cheese sauce into cooked pasta, reserving some cheese to garnish. Place cooked pasta and sauce into a prepared casserole dish, and top with reserved cheeses. Combine Panko with freshly grated Parmesan and spices, and sprinkle over macaroni. Broil for 5 minutes and serve.
