Grandma's Noodles Recipe

2 c flour
3 egg yolks
1 egg
2 tsp salt
1/4 to 1/2 c water

Directions:
Directions:
Measure flour into a bowl. Make a well in the center and add egg yolks, egg, and salt. With hands (or dough hook in mixer) thoroughly mix egg mixture into flour. Add water 1 Tbsp at a time mixing thoroughly after each addition. Add only enough water to form dough into ball.

Turn dough onto well floured cloth covered board. Knead until smooth and elastic. About 10 min. Cover and let rest at least 10 min.

Divide dough into four equal parts. Roll dough into paper thin rectangles.

Cut dough into 1/2 in strips for narrow noodles, 1/3 inch for wide. Lay flat to dry. When dry, break into smaller pieces.

Best when cooked in turkey drippings and chicken stock and served over mashed potatoes.

Mom used to make these delicious noodles every Thanksgiving. When she stopped making them, everyone wanted them. So one Thanksgiving Vic and I tried to make them. Oh what a colossal, sticky mess! But we laughed and laughed. Molly observed all this crazy attempt, so she decided to give them a try! Success! We all love Molly’s noodles!
