1 large onion (diced)
1 tsp. garlic powder
½ tsp. hot pepper flakes
3 tbsp. sugar
2 tsp. salt
3 cans Contadina tomato paste (6 oz.) (don't substitute)
2 qt. water

2/3 rack spare ribs
or
Meatballs:
2 lb. beef, pork, veal mix
2 slices wet & mushy bread
1 egg
½ c. sauce
¼ c. Parmesan cheese
1 stalk celery (diced)
1 sm. onion (diced)
1 tsp. salt
pepper to taste (I use 1/4 tsp.)

Sauce:
In a large pot, brown spare ribs in 1 tbsp. Crisco. Remove spare ribs from pot. In pot with oil and drippings, sauté onions. Add garlic powder, pepper flakes, sugar, salt, tomato paste and water. Stir well and add spare ribs. Simmer 4 hours.

Meatballs:
Mix all ingredients for meatballs and form into meatballs. Bake for 30 minutes at 350ºF. before adding to sauce in order to rid some of the fat. Place in sauce one hour before eating.

** Use as many spare ribs as you like. I use 2/3 rack for 1 batch. If you like a thicker sauce, simmer longer. Do not double or triple batch all together; make each separately.
