1/2 c sourdough starter (OR 1/2 tsp dry yeast)
1/2 c water
3/4 c flour

1 tsp salt

3 apples, unpeeled and grated
1 c old fashioned oats
1/4 cup brown sugar
1 1/2 tsp baking powder
1 Tbsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
6 eggs

START THIS RECIPE THE DAY BEFORE

USING SOURDOUGH STARTER:
'Feed' the starter as usual by adding 1/2 cup room temperature water, 3/4 cup flour. Stir and let sit on the counter for an hour or so. Pour off all but 1/2 cup of the starter into a large bowl for the pancakes. Store the remaining 1/2 cup of starter covered in the fridge for your next 'baking'.
IF YOU DON'T HAVE SOURDOUGH STARTER: Mix 1/2 c water and 3/4 c flour, and add 1/2 tsp dry yeast in large bowl for pancakes, let sit 1 hour
ALL RECIPES CONTINUE FROM HERE:
Add 1 cup water, 1 cup whole wheat flour, 1 tsp salt. Mix well, let sit on counter covered overnight.
IN THE MORNING:
Stir oats with brown sugar, baking powder, cinnamon, nutmeg, and cloves. Add to sourdough starter in large bowl along with grated apples and eggs. Stir to combine.
Heat a large oiled or nonstick skillet over low heat until hot. Increase heat to Med-High, and pour 1/4 cup of batter for each pancake. (Or, use 3/4 cup batter to make one large pancake, gently spread batter with back of spoon if thick). Cook until bubbles start to form on top, flip to other side. Cook for a minute or two more until done. Remove to wire rack while you complete baking the rest. (Keep warm in oven preheated to 200º then turned off, or just serve each batch as they come off the pan.)
Serve with real maple syrup.
