2 large potatoes (about 1-1/2 pounds)
2 teaspoons olive oil
SPOG to taste
1 whole roaster chicken or:
4 bone-in chicken thighs and 4 legs
2 teaspoons butter or 2 slices of bacon
2 cloves garlic, crushed and diced
1 teaspoon + Italian seasoning
Fresh sage, parsley, rosemary

Preheat oven to 450°. Cut each potato lengthwise into 12 wedges; toss with oil and SPOG . Arrange in a single layer in a greased 15x10x1-in. baking pan. Roast pieces on a lower oven rack 30-35 minutes or until tender and lightly browned, turning occasionally.
Place chicken in a large bowl eevo , SPOG and Italian seasoning. In a small bowl, mix remaining ingredients; add to chicken and toss to coat. Transfer to a rack in a broiler pan, skin side up. Place on an oven rack above potatoes with butter; roast 30-35 minutes or until a thermometer inserted in chicken reads 170°-175°. with 15 minutes to go, sprinkle diced herbs on chicken, Serve with potato wedges.

For whole chicken , oil, SPOG, Italian seasoning, diced garlic, rub down inside and out, place in roaster on fresh sage, rosemary, and parsley with 2 strips of bacon across breast and butter on top. add seasoned potato wedges and roast for 1 hour, 10 minutes at 350º
