1 (10.75 oz) vanilla pound cake, pound cake mix or homemade
1 (15-20 oz) container whole milk ricotta cheese (like Galbani’s)
1 tsp. vanilla extract
1/2 cup sugar, or to taste
1/2 cup mini chocolate chips
1/3 cup Rum, Amaretto, or liqueur of choice, optional
1-1˝ cups chopped nuts or sliced almonds, may need more

Directions:
Directions:
Mix ricotta, vanilla and sugar together with an electric mixer, at medium speed, just until blended. Do not over mix. Stir in chocolate chips. Chill one hour. Split cake into four layers. Brush with desired amount of rum or liqueur of choice, if using. Spread ricotta mixture between each layer, spread on top and sides of cake. Press chopped nuts in gently to stick, on top and sides. Wrap in foil and chill for 2 hours. Slice and enjoy.

We served this delightful cake at our restaurant, Enrico’s. It was a big hit with our guests, as was the cannoli. (same filling for both)
