1 Lb. Ground Breakfast Sausage
4 Cups Sharp Cheddar Cheese, Grated
12 Eggs
1 Large Onion, Chopped
1 Red Bell Pepper, Chopped
1 Cup Heavy Whipping Cream
1/4 Cup Green Onion, Chopped
Salt and Pepper, to taste

For the Gravy:
2 Cups Milk
1/4 Cup All-Purpose Flour
1-2 Tablespoons Butter
Salt and Pepper, to taste

Lightly grease 9 x 13" baking dish. In large skillet over medium heat, add sausage. When meat starts to brown add onion and bell pepper and cook until vegetables have softened. Add green onion and remove meat and vegetables from skillet and set aside to cool. Gravy, add butter to undrained skillet. When melted whisk in flour and cook for 2 minutes. Gradually whisk in milk until gravy thickens and simmer 2-3 minutes more- add salt and pepper to taste. Cover and refrigerate after it cools. In prepared baking dish, crack eggs evenly across the bottom of the dish and keep yolks in tact. Poke a hole in each yolk with toothpick and pour cream over the eggs. Top with 1/2 of cheese. Spoon meat and vegetables over the eggs and cream. Top with remaining cheese. Cover with foil and refrigerate overnight. In AM, preheat oven to 350º. Bake covered for 30 minutes, remove foil and cook an additional 30 minutes. Reheat gravy and enjoy!
