1 cup smooth peanut butter

½ cup packed light brown sugar

½ cup granulated sugar

1 large egg

1 tsp baking soda

1 tsp vanilla extract

¼ tsp kosher salt

Directions:
Heat the oven to 350º.

Line two ½ sheet pans with parchment paper and set aside.

Beat together the peanut butter, brown sugar, and granulated sugar until well combined with a wooden spoon in a large bowl. Add the eg, baking soda , vanilla and salt, beat until well combined.

Roll the dough into 1 ounce balls, place 6 per prepared sheet pan, then flatten with the tines of a fork.

Bake for 10 min or until the cookies look dry and are just lightly browned.

Cool the cookies for 2 min on the sheet pan.
