½ cup butter + ½ cup lard
2 cups brown sugar
2 beaten eggs
1 tsp. vanilla
2 cups sifted flour + ½ tsp. baking soda
1 tsp. baking powder + ¼ tsp. salt
2 cups rolled oats
1½ cups fine, unsweetened coconut

Directions:
Directions:
Cream butter and lard. Add sugar and cream well. Add beaten eggs and vanilla. Sift together flour, soda, baking powder and salt. Add to the butter and egg mixture with oats and coconut and combine well. Roll into small balls and press down with a fork. Bake at 350º for 10 to 15 minutes on a greased cookie sheet.

You could always tell how much a recipe was used by the faded colour and worn edges of the clippings taped into Mom’s steno pads. This one was especially telling—smudged, stained, and worn by years of use. These cookies were clearly made with love, and no surprise, they were one of Dad’s favourites.
