700 grams margarine
600 grams granulated sugar
1 kilogram self-raising flour

Directions:
Directions:
Preheat oven to GM4/350ºF/180ºC.
1. Put margarine, sugar and flour into mixing bowl.
2. Mix together on speed 1 for 2 minutes.
Scrape down then mix on speed 2 until the dough
3. comes together. 4. Divide into equal blocks for 20 portions.
5. Shape each block into a sausage shape and slice each one into 20 portions.
6. Bake in oven for 10-15 minutes.
7. Place on a serving tray.

Variations on basic cookie mix - add to dry mix

For ginger cookies add 40 grams of ginger.
For sultana/raisin cookies add 250 grams of sultanas or raisins (soak in boiling water and drain to make easier to portion and softer to eat).
For chocolate cookies add 60 grams cocoa powder.
For cinnamon cookies add 40 grams of cinnamon.
For gluten free cookies swap out the flour for gluten free flour and add gluten free baking powder (2 level teaspoons per 225 grams flour).
