Cake

1 cup white sugar
1 cup oil [substitute 1 cup unsweetened apple sauce]
3 eggs
2 cups grated carrots
1 cup chopped nuts
1 ½ cup flour
1 tsp salt
1 ⅓ tsp baking powder
1 ⅓ tsp baking soda
1 ⅓ tsp cinnamon
½ tsp cloves [optional]

Icing:
4 ounces cream cheese
¼ cup butter
1 ½ cup icing sugar
1 tsp vanilla
Directions:
Directions:
Beat together white sugar, oil, and eggs.

Add flour, salt, baking powder, baking soda, cinnamon, and cloves

Fold in carrots and chopped nuts

Bake 300º for 1 hour in a 9 x 13 pan


Icing:
Beat all ingredients together until smooth.
