10 lb. russet potato
2 packages celery
2 medium sweet yellow onions
8-9 large, hard-boiled eggs
2 30 oz jars of Hellmann's mayo
1 16 oz jar of sweet gherkin pickles
Mustard
Sugar
Salt
Pepper

Directions:
Rinse potatoes, then boil whole, about an hour; ready when able to pierce with fork; drain water and let cool, about 40 minutes
While potatoes are boiling/cooling prepare everything else.
Hard boil eggs; once cooled cut in half, then in thirds
Cut gherkins lengthwise and coarsely chop (bigger than celery); save juice
Rinse and dry celery, then slice lengthwise and chop
Finely chop onion; (smaller pieces than celery)
Once potatoes are cooled, crush with hands into very large bowl
Add celery, onion, pickles; mix
Add one jar of mayo
Add mustard, salt and pepper to taste (less pepper than salt); mix
Add additional mayo as needed to desired consistency
Add sugar to taste (no more than 1/4 cup)
Add 1/4 pickle juice and eggs; mix
Best made the day before, or at least 4 hours before consumption
