• 8-10 good size tomatoes (12-15 small ones)
• 1/2 cup butter
• 1-2 yellow onions
• 1 full garlic bulb
• green yellow or red pepper (1-2)
• 1/4-1/2 cup fresh basil
• 1 6oz can tomato paste
• thyme or marjoram
• Tuscan style Italian seasoning (McCormick preferred)
• sugar
• salt

Full cook time is about 3-4 hours)

Directions:
• Start with about 8-10 good size tomatoes (12-15 if using smaller tomatoes), cut them in quarters and then in 1/8ths

• melt 1/2 cup of melted butter in pan
• add tomatoes
• let simmer on low (can simmer up to half a day, just cook out the water) stirring occasionally

• In a separate pan- sautι until softened-
1-2 yellow onions coarsely chopped, 1 full garlic bulb chopped, green yellow or red pepper (1-2)
• Then add to sautιed tomatoes

• add fresh 1/4-1/2 cup basil chopped
• add full 6oz can of tomato paste
• add some thyme or marjoram
• Sprinkle over Tuscan style Italian seasoning (McCormick preferred) to taste (1-2tsp +)
• add handful of sugar
• add salt to taste
• stir and simmer on low until thickened

Serve over choice of pasta, full cook time is about 3-4 hours
