Norm's Oatmeal Cookies Recipe

1 cup white sugar
1 cup brown sugar
(or 2 cups coconut sugar)
½ tsp. salt
1 tsp. vanilla
1 cup butter

2 beaten eggs (use whisk or egg beater to blend whites and yolks together well)
3 cups oatmeal (Make sure they are GF if making this for gluten intolerant)
1½ cups flour (Can use Bob's Red Mill 1-to-1 flour for GF
1 tsp. soda
½ tsp baking powder

Directions:
Directions:
In a mixing bowl, mix sugar, salt, vanilla and butter together until well blended.
Add eggs, oatmeal, flour, soda and baking powder.
Mix all ingredients together. Roll in balls. Roll balls in white sugar or coconut sugar.
Bake 10 minutes at 350º. If too soft, bake 1-3 minutes longer. They are better if you take them out of the oven while they are still a little soft (unless you like them crunchy).
