8 boneless, skinless chicken breasts halves, pounded
Salt and freshly ground white pepper
1/8 tsp. paprika
2 Tbsp. olive oil
1 Tbsp. butter
1/2 cup dry vermouth
1 Tbsp. whole grain mustard
1 Tbsp. dijon mustard
1 tsp. dry mustard
1 cup heavy cream, at room temperature
Directions:

Sprinkle the top of each chicken breast lightly with salt, pepper and paprika and rub into meat. Heat one 1 tablespoon oil and butter in a large skillet over medium heat.
Cook half of the chicken breasts in the skillet until golden brown.
Turn and cook until the chicken feels springy to the touch and is well browned, about 5 minutes. Remove to a platter, cover loosely with foil and keep warm. Repeat with the remaining, oil, butter and chicken breasts. Stir the 3 mustards together.
Add the vermouth to the skillet and bring to a boil, scraping up any browned bits.
Whisk in the mustards and cream and reduce the mixture until it is thick enough to coat
a spoon, about 3 minutes. Adjust seasoning. Return the chicken breasts to the sauce, turning them to coat well. Transfer them to a serving platter, pour the sauce over them, and serve. Serves 8
