1/4 cup paprika
1/8 cup fresh ground pepper
1½ Tbsp garlic powder
2 Tbsp onion powder
1 Tbsp cayenne, or to taste (I use 3/4 T with my family and 1¾ T with my friends)
1/4 cup coarse salt
1/4 cup brown sugar

This will coat up to 6 lbs of pork ribs and 10 lbs of pork shoulder or pork roast. When using it on ribs or roast, coat meat and wrap. Then place in refrigerator for 20 minutes.I normally do not do this with pork chops unless they are thicker than 1½” thick.

Mom loves this recipe and we use it on chicken as well. I came up with this recipe several years ago. It has since become a family favorite. I heard Uncle Michael uses it all the time.
