1 lb Great Northern Beans
5 c. water
2 tsp dry mustard
¼ t. pepper
2 tsp salt
2 quartered, peeled yellow onions
¼ c. brown sugar
½ c. molasses
2 Tbsp pickle juice or cider vinegar
Dash of ground clove and ground cinnamon
¼ lb salt pork

Directions:
Directions:
1. Rinse beans. Put in a large pan with 3 c. water, soak overnight or 8 hrs.
2. Add 2 c. water, mustard and next 6 ingredients.
3. Cover, boil until skins wrinkle when blown on (about 40 min).
4. If using bean pot, heat oven to 250. If using crock pot, set to low.
5. Cut through the salt pork at ½“ intervals. Place in bean pot or crock pot.
6. Cover with the hot beans and liquid. Sprinkle with pepper.
7. Cover and bake in slow oven or low crock pot 6-8 hrs or until tender.
8. When about 2/3 baked, add ¾ water or enough to cover beans.
9. Uncover during last ½ hr. of baking.
