6 small zucchini
1 cup minced mushrooms
1 egg, beaten
8 Tbsp grated Parmesan cheese
2 Tbsp chopped fresh or 2 tsp dried basil
Salt & Pepper, to taste
1 Tbsp butter

Directions:
Directions:
Preheat oven to 325º
Trim ends from zucchini and drop into boiling water for 8 minutes; drain well.
Slice zucchini in half lengthwise and scoop out pulp, leaving 1/4" shell.
Combine pulp with mushrooms, egg, 6 Tbsp cheese and seasonings.
Place mixture in zucchini shells, sprinkle with remaining cheese and dot with butter.
Place shells in a shallow buttered baking dish and bake at 325º for 30 minutes.
Broil for the last two minutes to brown the cheese.
