1/2 Box penne (8 oz)
1 - 5 oz oil packed tuna, drained
1/2 cube salted butter
salt and fresh ground pepper, to taste
3 or 4 anchovy fillets chopped (optional but good) use the whole can if you like
2 tsp capers (optional but good)
1 clove garlic thinly sliced
1 bunch fresh parsley fine diced
1/2 Med Yellow Onion diced
1 - 8 oz Tomato Sauce

Put large pot salted water on to boil...
Melt butter in sauce pan and cook onions until opaque.
Add garlic, anchovies, parsley, capers. stir until anchovies dissolve.
add pasta to boiling water at this time.
Add tuna to sauce, stir in and add tomato sauce, salt and pepper.
Simmer 5 min. Drain pasta and add sauce.
Ready to serve and enjoy...

Tip: sprinkled crush red peppers into sauce if you like it warm!

Change UP... (pasta salad)
Substitute 1/4 cup olive oil for butter.
Substitute 1 1/2 cups split cherry tomatoes for tomato sauce.
Juice and zest from one lemon
Drain and cool pasta.
Mix olive oil and lemon juice and zest, salt, and pepper (reserve)
Mix onion, parsley, tomatoes, diced garlic and stir into pasta.
Crumble tuna, dice anchovies and sprinkle both over pasta and stir in.
Add oil/lemon dressing and stir.
Ready to serve and enjoy.
