16 oz. Macaroni
3/4 c. Butter
1/4 c. Flour
2 c. Heavy or Light Cream
1 c. Milk
6 c. Cheese- Colby/Jack, Any Cheddar, Mozzarella (tastes better when you shred it)
To Taste: Pepper-Garlic Powder-Parsley-Paprika-Oregano-Thyme-Basil-Chili Powder

Preheat Oven to 350º .
Butter larger casserole dish.
Cook macaroni in salted water until al dente. Drain.
While macaroni is cooking make the rue.
In large pot, on medium heat, melt 3/4 c. butter and then add 1/4 c.flour-constantly stirring.
Add your chosen spices. When it becomes thick, slowly add cream and milk.
Change heat to medium high and constantly stir until it becomes hot and thicker.
Turn off heat and add 4 cups of cheese.
When cheese is melted add macaroni to cheese rue.
Pour all into buttered casserole dish and top with the remaining cheese.
Sprinkle with chosen spices.
Bake 30-45 minutes-until cheese is bubbly.
