4 cups warm water
1 Tbsp yeast
1 Tbsp sugar
½ cup potato flakes

Mix well and let sit until yeast mixture is fluffy (appx 10 minutes)

8 cups sifted flour
2 tsp salt
2 Tbsp sugar

Mix dry flour, salt and sugar in a large bowl.
Add the yeast mixture to the dry ingredients and knead well.
Cover and keep warm appx 30 minutes
Punch down and divide into loaves. Let rise above top of greased pans.

Preheat oven to 350 degrees.
Bake 30 minutes. Turn pans around and bake about 10 minutes more.

Grandma Heiner originally used leftover potatoes, but when she gave me the recipe she said she preferred using potato flakes instead.
