Pecan Shortbread Crust

1 C flour (all-pupose)
½ C butter
¼ C brown sugar
¾ C pecans / chopped

Directions:

Preheat to 350º
Melt butter, then combine butter, flour, brown sugar, pecans by stirring with a fork.
Press into the bottom of a 9" pie plate - deep dish.
Bake for @ 15-20 mins, just until the crust begins to brown around the edges.
Remove from oven and cool completely.
 

Cream Cheese Layer

6 oz cream cheese / softened
½ C powdered sugar
2 tbsp heavy cream

In med bowl, mix cream cheese, powdered sugar and heavy cream using a hand mixer until smooth. Spread over bottom of the cooled pie crust.
 

Pudding Layer

1 C sugar
⅓ C cocoa powder
3 tbsp cornstarch
2 tbsp flour (all-purpose)
Salt pinch
3 egg yolks (room temp prior to separating)
2 C milk (whole)
2 tbsp butter
1 tsp vanilla

Directions:
Directions:
Combine sugar, cocoa powder, cornstarch, flour, salt in a med saucepan and whisk well. In separate bowl, combine egg yolks, milk and whish well, then add sugar / cocoa mixture in the saucepan, whisking to combine.
Cook over med heat, whisking constantly until pudding begins to thicken and bubble (@ 7-10 mins).
Remove from heat and add butter and vanilla, stirring just until the butter is melted and combined.
Transfer the choc pudding to a shallow bowl and cover w/ plastic wrap directly on the surface of the pudding to prevent a skin from forming, then refrigerate for 30 mins to help the filling cool down.
When the filling has mostly cooled down, remove plastic wrap and stir, then spread over the cream cheese layer.
Cover pic w/ plastic wrap, then refrigerate for 4 hours until set.
 

Whipped Cream Topping

½ C heavy whipping cream
2 tbsp powdered sugar
½ tsp vanilla
1-2 tbsp chopped pecans
Grated choc

Beat heavy cream w/ powdered sugar, vanilla using a hand-mixer until whipped cream forms and holds it's shape when beaters are removed. Spread whipped cream over top of choc putting layer and sprinkle w/ pecans and choc shavings before slicing and serving.
