3 tbsp butter
¼ C light brown sugar / packed
⅛ tsp cinnamon
1 apple, sweet (eg: Fuji) / peeled and sliced
3 eggs (large)
¼ tsp salt
½ C flour
½ C milk
1 tbsp lemon juice / fresh
1 tbsp powdered sugar

Preheat to 425º
Melt butter in 12" ovenproof frying pan over high heat. Add brown sugar, cinnamon, swirling to combine. Add apple and cook until just starting to soften (@ 3 mins).
Meanwhile, in blender, whirl together eggs, salt, flour, milk. Pour egg mixture into pan and bake until puffed & brown (@ 15 mins). Sprinkle w/ lemon juice and powdered sugar.
