1 pound ricotta cheese
½ cup grated Pecorino Romano Cheese
½ cup shredded mozzarella cheese
1 teaspoon salt
1 tablespoon parsley
½ cup sliced pepperoni or prosciutto (optional)
1 pizza dough (store bought or from our recipe)
1 egg beaten with 2 tablespoons milk

Directions:

Beat together eggs, ricotta, pecorino romano, mozzarella, salt, parsley and pepperoni or prosciutto, if using. Mix well and refrigerate 30 minutes.

Preheat oven 375º.

Separate pizza dough into 2 equal parts. Spread half in lightly oiled 8 ich pie pan.
Spread ricotta filing over and stretch second piece of dough over filing. Seal edges, crimping together. Make a few slits on top. Brush with egg-milk mixture.

Bake 30 minutes or until golden brown.
