1 lb - Hamburger
1 - Small Onion, chopped
2 - Shredded Carrots (I used shredded in the bag)
1 - Stalk Celery, optional
1 tsp - Basil
1 tsp - Parsley
4 T - Butter (I use the real stuff)
3 C - Chicken Broth
3 C - Frozen Hashbrowns
¼ C - Flour
8 oz - Velveeta, cubed
1½ C - Milk
¼ C - Sour Cream
Salt and Pepper to taste

Directions:

Brown and drain hamburger, set aside.
Sauté onion, carrot, celery, basil and parsley in 1 T of butter.
Add broth, potatoes and meat and bring to a boil.
Reduce heat, cover and simmer until potatoes are done.
In small pan melt butter, add flour and stir until bubbly.
Add to soup, cook and stir 2 minutes.
Add cheese, milk, salt and pepper. Stir until cheese melts.
Remove from heat and add sour cream.
Stir until mixed.

When it is your birthday I always have you pick your birthday meal. All of you have asked for Grandma to make this. She would make a big pan of soup and bring it to our house. We would heat it up and all of you guys would gather around the stove waiting to dig in!
