Granny's Carrot Cake Recipe

Cake:
1 1/2 cup oil
2 cup sugar
4 eggs
3 cups carrot (grated)
2 cups flour
2 tsp baking soda
2 tsp baking powder
1/2 salt
2 tsp cinnamon

Icing:
1 8oz Cream Cheese (softened)
1/2 stick butter
1 tsp vanilla
1 box of confectionary sugar
1 1/2 cups of pecans

Directions:

Preheat Oven to 350*
Cake:
1. Sift together flour, baking soda, baking powder, salt and cinnamon. Once sifted and fully mixed, set aside.
2. Cream sugar and oil together before adding eggs one at a time making sure they are fully mixed before adding the next.
3. Add dry mix into egg/oil mixture a little at a time until mixed then add carrots.
4. Put Brown paper/parchment paper at bottom of 13x9'' stoneware pan(cake pan)
5. Bake for 1 hour (+/- 15minutes until stick comes out clean)
6. Take out to cool.

Icing:
1. Mix cream cheese and butter together until creamy
2. Add into that mixture 1 box of confectionary sugar
3. Add pecans

Assemble cake and enjoy.
