- 1 cup sugar
- 4 tbsp. sifted cornstarch
- 2 egg yolks (reserve whites)
- ½ cup evaporated milk
- 2 cups of whole milk
- 1 tsp. vanilla
- 1 box vanilla wafers
- 3 ripe bananas (sliced)

Combine sugar, cornstarch in sauce pan. Beat egg yolks, add evaporated milk and whole milk. Pour mixture into saucepan and stir over medium heat. Stir constantly (about 15 minutes). When pudding is thick, remove from heat. Stir in vanilla. Allow pudding to begin to cool, but stir occasionally so it doesn’t get lumpy.
Line a 11 x 5 x 3 loaf pan with the vanilla wafers. Add bananas over the cookies.
Beat room temperature egg whites until stiff. Fold a little pudding to the beaten egg whites to raise the temperature (you may have to do this 2 or 3 times). Fold egg white mixture into pudding. When completely added, pour into loaf pan. Add vanilla wafers along border of loaf pan. Garnish with crumbled vanilla wafers. Enjoy!!

This recipe came from my great-grandmother and was passed down to my grandmother. This is one of my favorite recipes that my grandma makes. Not only is it delicious, but I can make it myself.
