2 cups, minus 2 tablespoons cake flour
1 2/3 cups bread flour
1/4 tsp baking soda
1 1/2 tsp baking powder
1 1/2 tsp coarse salt
2 1/2 sticks unsalted butter
1 1/4 cups light brown sugar
1 cup plus 2 tablespoons sugar
2 eggs
2 tsp vanilla
1 1/4 lbs bittersweet chocolate fèves, at least 60 percent cacao content (or chocolate chunks, discs, or chopped baking chocolate)

Combine the flours, baking soda, baking powder, and salt.
Cream together the butter and sugars for 5 minutes.
Add the eggs one at a time, mixing well after each addition.
Mix in the vanilla, then lower the speed and mix in the flour for just a few seconds.
Carefully fold in the chocolate fèves with a spatula.
Cover the bowl of cookie dough with plastic wrap, pushing the wrap so that it is flat against the dough to prevent air pockets, and refrigerate for 36 hours.
Use a 2-Tbsp scoop to arrange the cookies on a parchment lined baking sheet and sprinkle the tops with seas salt.
Bake for 11 - 13 minutes at 350º, then cool for 5 - 10 minutes.

For larger cookies:
Scoop golf ball-size mounds of dough onto a parchment lined baking sheet.
Sprinkle lightly with sea salt and bake at 350º until golden brown but still soft, 18 - 20 minutes.
