1 c dried chickpeas
1 T kosher salt
12 oz marinated artichoke hearts drained
1/2 c drained julienned sun dried tomatoes use oil packed
Oil for pan frying like avocado

Directions:
Soak chickpeas in water 12-24 hrs
Drain the chickpeas and add to food processor with the salt. Pulse and scrape until fine mince and hold together when squeezed. Transfer to bowl.
Add artichoke to processor and pulse til minced. Add to chickpeas. Add sun dried tomatoes to processor and mince then add to other ingredients. Form mixture into 6 burgers. Refrig covered for 1 hour up to a week.
To cook: heat cast iron skillet over medium heat. Add neutral oil to thickly coat bottom. Use spatula to carefully add burgers, 3-4 min per side til deeply brown, crusty, and cooked through. Don’t press on burgers. Plate or wire rack to cool
Top with spicy mayo, onion, Dijon, pickles. Pita or bun or English muffin
