French Silk Cookie


Ingredients:

1 ½ C       Salted Butter (softened to room temperature)
1 ½ C       Light brown sugar
1 C         Granulated sugar 
2           Eggs (large)
1 T         Vanilla Extract
3 C, 2 T      All Purpose flour
1 C         Black Cocoa Powder 
2 ½ C       Oreo cookie crumbs
1 ½ t        Baking soda
1 t          Salt

Preheat oven to 365

In bowl with mixer, cream the butter, brown sugar and granulated sugar on medium speed. Add eggs and vanilla and mix to combine.

Add the flour, black cocoa, Oreo cookie crumbs, baking soda, baking powder, salt and mix well.
  
Portion dough into 1/3 cup sized balls and put on baking sheet. Using the palm of your hand, press down slightly. Bake 11 minutes - remove from oven.

Use a small cup (spray cup with cooking spray so it does not stick to the cookie) to press into the center of the cookie (this is where the chocolate mousse will go) don't press too hard. You will want it to be big enough that it creates a ridge around the cookie. Bake an additional 1-2 minutes and let it cool.
 

Chocolate Mousse


Ingredients:

Chocolate Mousse Topping
¾ oz        Chocolate instant pudding
2 C         Heavy cream
½ C         2% Milk
2/3 C        Powdered sugar
3 T          Dutch Chocolate cocoa powder
1 t          Vanilla extract

Toppings
Whipped cream (homemade is the best!)
Chocolate shavings

In large bowl, add the dry chocolate instant pudding mix, heavy cream, milk, powdered sugar, Dutch chocolate cocoa powder and vanilla extract. Using a hand mixer, mix until smooth and thick. Place in the center of the cookie.

Add whip and chocolate shavings.
