Pie Crust for 2 Pies

Pie Crust:
3 cups All Purpose Flour
1 teaspoon Salt
1 teaspoon Sugar
1 ¼ cup Crisco Shortening


1 Egg, slightly beaten
½ cup Cold Water
1 teaspoon Vinegar

Directions:
Directions:
Mix the first 4 ingredients together in a blender until it looks like the size of peas.
Make a well in the center of the flour mixture.


Mix next 3 ingredients together. Don't work dough too long or crust will not be flakey, just long enough that it will make a firm ball.

Sprinkle flour on board and roll out. Spray 2 pie pans with Pam and place rolled dough to line the 2 pie pans. Prick small holes with fork over the bottom of the pans.
Bake at 400º until lightly browned.
 

Chocolate Pie Filling and Meringue for 2 Pies


Ingredients:

Filling:
1 ¾ cup Sugar
4 tablespoons Cocoa
5 heaping tablespoons Flour
4 cups Evaporated Milk
¼ teaspoon Salt
5 Eggs, separated
2 sticks Butter
5 heaping tablespoons Flour
1 teaspoon Vanilla

Meringue:
5 Egg Whites
½ teaspoon Cream of Tarter
10 tablespoons Sugar
1 teaspoon Vanilla

Pie Filling:
Mix sugar, cocoa and flour thoroughly.
Add milk and salt.
Cook in a double boiler on low fire. When milk gets hot, stir in egg yolks. When mixture gets thick add butter stirring constantly until it is thick again. Add vanilla.
Pour into the 2 baked pie shells.

Meringue:
Beat until very stiff but not dry.
Spread on pies.
Bake at 350º until lightly browned.
