Grandma Marcie's Raisin Cream Pie Recipe

Ingredients: 1 ½ raisins 1 cup water ¾ cup sugar ¼ cup flour 1½ tsp cinnamon 1 ½ cup half and half 3 egg yolks 1 Tbsp cornstarch ⅔ cup water 3 egg whites ½ cup sugar

Directions:Place homemade or pre-bought pie crust in a pie plate. Prick the sides and bottom with fork. Place a double thickness of foil over pie crust. Bake at 450º for 8 minutes. Remove foil. Bake an additional 5 or 6 minutes or until golden brown.
Combine raisins and water in saucepan and bring to boiling. Simmer uncovered for 5 minutes.
In separate bowl, stir together sugar, flour, and cinnamon. Stir in cream until well combined. Add to raisin mixture. Cook and stir until thickened and bubbly. Cook and stir 1 minute more. Remove from heat.
Beat egg yolks with fork. Gradually and slowly add 1 cup of hot mixture into the yolks being careful not to "cook" the yolks. Then gradually add yolks to hot mixture. Bring to a gentle boil and cook 2 minutes.
For the meringue, mix cornstarch and ⅔ cup water. Cook until thickened and bubbly.
Beat egg whites with electric mixer until soft peaks (tips curl). Continue beating while adding ½ cup sugar. Beat until stiff peaks form (tips stand straight). Fold into cornstarch.
Pour filling into pie crust. Layer meringue over filling, sealing edges. Bake in 400º oven for 12 minutes. |
