3 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
1 cup butter (2 sticks)
1 cup sugar
1 cup packed brown sugar
1 egg
1 cup oil
1 tsp vanilla
2 cups cornflakes crushed
1 cup oats
1/2 cup coconut

Directions:
Directions:
In a medium bowl combine flour, baking soda, and salt. Set aside. In large bowl beat butter for 30 seconds and add brown sugar
and granulated sugar. Beat until combined scraping sides of bowls. Beat in egg, oil and vanilla until combined. Beat in as much of the flour mixture as you can with the mixer. Using a wooden spoon, stir in any remaining flour mixture. Fold in crushed cornflakes, oats and coconut. Shape dough into balls and place on cookie sheet. Flatten slightly with tines of a fork.
Bake at 325 degrees for 12-14 minutes or until slightly browned. Cool on cookie sheet for 2 minutes before taking off. (In my oven it usually takes 14-16 minutes).

I'd never overseen a conference before and there were endless things I didn't know. I could always count on you to quietly nudge me with a prompt: "should we start people moving?" or something similar. But your support didn't end there - you always knew just when to come around with a relaxing shoulder massage to chill the vibe in the room.


You've worked so hard in your career, I'm so happy that you are retiring and wishing you the most wonderful things! This cookie recipe is a family favorite - cookies are crumbly and crunchy (and great with ice cream!)
