1 lb ground beef or turkey
1 1/2 t Italian season
1/2 t salt
1/4 t pepper
Olive oil or avo oil
2 med zucchini 1/2 in round oven roasted to remove water
2 c mushrooms oven roasted
1/2 med onion diced after roast
4 garlic cloves minced
2 c spinach
1/4 c basil rough chop
24 oz marinara
1 T balsamic
1 c shredded mozz
1 c cottage cheese (I like sheep)
1/2 c Pecorino shredded
S & P to taste
Optional garnish: Pecorino, basil

Directions:
Directions:
Oven roast zucchini, mushrooms, onion. Then rough chop.
Deep skillet over med high heat saute meat, ital season, salt and pepper. Set meat aside.
Wipe skillet and add olive oil and heat. Add veggies, spinach, basil for few min.
Add marinara, vinegar, meat, 1/2 c mozz..
Dollop cottage cheese evenly over top and cook on low simmer uncovered for about 10 min.
Top with remaining 1/2 c mozz and pecorino. Cover skillet and cook 5 min til cheese melted.
Remove from heat and let set about 10 min uncovered.
Garnish as desired
