1 cup Old Fashioned Rolled Oats
2 1/4 cups Flour
1 teaspoon Baking Soda
3/4 teaspoon Salt
1 cup Salted Butter
1 1/4 cup Light Brown Sugar, packed
1/2 cup Dark Brown Sugar
1/2 cup Applesauce or 2 Eggs
1 Tablespoon Vanilla
1 cup Coconut
2 cups Chocolate Chips

Directions:
Directions:
Blend together oats, flour, soda and salt in a food processor. In a mixer mix softened butter and brown sugars. Add vanilla and applesauce. Mix again, scrapping sides of bowl. Add dry ingredients. Mix with spoon. Add coconut and chocolate chips. Mix again, just until combined. Using two spoons or a cookie scoop, scoop out cookie dough and put on parchment paper covered cookie sheets. Bake for 10-12 minutes in a 350º oven. Let rest 2 minutes on pan before transferring to a cooling mat.

I used applesauce here because I didn't have any eggs. You can substitute the applesauce with 2 eggs if you have them. The applesauce isn't enough to alter the taste of the cookies and is good for people who can't have eggs.
