1 LB Pinto Beans
Chicken broth
1 large onion
1 large bell pepper
1 stalk of celery
4-6 cloves of garlic
2-TBSP of olive oil
1 can of diced tomatoes
1 LB Italian sausage
Salt & Pepper to taste

Directions:
Directions:
Cover beans with chicken broth to boil.
Add rest of ingredients, except the sausage
Cook until beans are cooked, adding water if necessary to make a "soup" consistency. Cook approximately 1 hour on simmer after beans have been boiling for a while and are almost cooked.
Add sausage and pasta and cook until pasta is al dente. Let flavors blend about 15 min.

Serve hot with Parmesan cheese and Italian bread.

This is a recipe I first learned to cook from my beautiful Mother-in-Law, "Rosa" or "Nonna" to my children. She was from a little town in Italy called, Roncade, very close to Venice. She spoke very little english, but I watched her make this heart-warming dish many, many times. We would enjoy this with bread and a bottle of wine when we would go visit her. She would always tell me to add whatever I wanted and it was ok to "burn" things a bit because it made some things taste good? Hahaha! So glad, because I did that alot when I was a young wife :):):)

This is always my go-to meal for celebrating St. Joseph's Day!
