Ingredients:  
1.5 pounds of brussel sprouts (Sam's has them);

.5 lb of diced, thick, good bacon;

1 C sliced, sweet onion;

1 tsp minced garlic;

2-3 Tbs diced shallots

2 Tbs good balsamic vinegar

Directions:
Directions:
1. Soak the sprouts in salted cold water for 20 minutes and the drain them;

2. Trim, core & halve the sprouts;

3. Par-boil the sprouts for 3 minutes and then plunge them into ice cold water to cool down immediately and then drain them well and set aside ;

4. Saute the bacon on medium heat until browned and them remove the bacon and set aside but keep the drippings in the skillet;

5. Saute the sprouts, onions and shallots until soft;

6. Now, add the balsamic, and bacon and saute everything for a few more minutes,until golden brown.

7. In the last minute or so, add the garlic.

8. Salt & pepper to taste.
