Ingredients: CRUST: 2 cups flour 1/2 tsp baking soda 1/2 tsp salt 2/3 cup softened butter 1/2 cup sugar 2/3 cup brown sugar 1 egg 2 tsp vanilla 2 cup chocolate chips
FILLING: 8 oz softened cream cheese 1/2 cup sugar 1 egg 1 tsp vanilla

Directions:1) Preheat oven to 350º. Line a 9" x 9" baking pan with parchment paper and spray with nonstick spray. 2) Whisk together flour, baking soda, and salt for crust. 3) Cream together butter, brown sugar, and sugar until fluffy. Add egg and vanilla and whip to incorporate. Add flour mixture and mix until incorporated. Fold in chocolate chips. 4) Press ⅔ of the mixture into the bottom of the prepared pan to form an even layer. 5) Combine filling ingredients and beat until blended. Spread filling over the cookie dough layer and level. 6) Crumble remaining crust dough over the filling layer. 7) Bake for 40 minutes, or until cheesecake is set and cookie dough has browned. Allow to cool completely and chill before slicing. |

Notes: Our son made these one time when he was visiting and the whole family was addicted to them. He was so proud of the recipe, he wouldn't give it to any of us! So, it was always a special treat at family get-togethers when Christian made (aka was forced to make!) the cheesecake bites for everyone! Luckily for you, he caved in and gave me the recipe to share in this cookbook! I hope you love them as much as my family does!
